    Bûche de Noël is the essence of Christmas in France. Winter roulade, most often in the shape of a wooden stump, the history of which dates back to the 12th century. The whole family sat on Christmas Eve at the home hearth, in which a specially selected stump of wood was lit. Before firing, the stump was decorated and sprinkled with oil or fruit wine. The ash that was left was to protect the house from lightning and evil forces.

    Today, the stump-shaped roulade is to refer to these important traditions. This year, we focused on elegance - a white stump decorated with edible gold is a mousse based on Italian mascarpone with a layer of chocolate mousse, a crispy nut insert and a gingerbread biscuit soaked in aromatic espresso.
